Laboratories

Physicochemical laboratory, Microbiological examination, Sensory examination

  • Physicochemical and microbiological tests of finished meat products and additives in the form of powders

  • In the field of physicochemical analyzes, we examine the protein content by the Kjeldahl method, the content of phosphates, fat, chloride, water, ash, hydroxyproline

  • We also measure viscosity over a wide temperature range using a Brookfield camera

  • As part of microbiological analyzes, we determine the number of mesophilic aerobic microorganisms, coliforms, Escherichia coli, Salmonella, Staphylococcus aureus, molds and yeast, anaerobic bacteria that reduce sulfate (II)

  • As part of sensory research, we conduct a comparative analysis of products due to their taste, smell, color, consistency and overall product recall

Performs basic and specialized analyzes. In addition to the possibility of determination of protein, phosphate, fat, salt, water, ash and hydroxyproline. In the pool of physico-chemical analyzes, an important place is taken by testing the viscosity of thickeners, in particular determining the dependence of viscosity on temperature. The laboratory also has the option of testing the texture of meat products.

The laboratory has an FTNIR (near infrared) Spectrometer Spectrum One NTS from Perkin Elmer. The spectrometer is used to identify the raw materials and products carried out as part of the Quality Control Department. It is a device working in pharmaceutical standards that avoids any incompatibilities related to the quality of UNIPRO finished products.

The scope of tests of the microbiological laboratory include: the total number of microorganisms, bacteria from the group of coliforms, Escherichia coliforms, staphylococcus aureus, salmonella as well as molds and yeasts.

The UNIPRO laboratory is primarily responsible for the quality control of UNIPRO products and hygiene testing at the Production Plant. The whole research is based on a detailed schedule contained in the Quality Book.

UNIPRO has invested in a modern, comprehensively equipped sensory analysis laboratory. It was designed and made with the help of the largest Polish and foreign scientific centers specializing in sensory research.

The laboratory consists of 2 rooms: a preparation room and a proper sensory assessment room, which consists of 6 individual assessment stations. The laboratory provides optimal conditions that eliminate the influence of external factors, facilitate concentration, and thus allow reliable assessment results.

The creation of a professional sensory laboratory at the UNIPRO Production Plant is the Company’s investment in guaranteeing the quality and repeatability of the most important feature of a food product, which is its taste.
